Lemon Cream Scones with Chia Seeds

Chia SconeI don’t know what it is, but scones just feel so dainty and refined. They actually are not that much more work than a muffin. I mean don’t get me wrong about muffins, I love my muffins. But scones just seem to be a tiny bit fancier. A nice afternoon treat with a cup of tea, or a lunch served with a side of fruit. If you haven’t made them before, give them a try. You will be delightfully surprised at the ease of baking, and then you can impress your friends too.

Recipe from Kristine’s Kitchen

For the scones:
  • 2 cups flour
  • 1 tbsp. baking powder
  • 3 tbsp. sugar
  • ½ tsp. salt
  • 2 tablespoons lemon zest
  • 5 tbsp. cold unsalted butter, cut into small cubes
  • ¼ cup chia seeds
  • 1 cup heavy whipping cream
  • Parchment paper
For the glaze:
  • 3 tablespoons powdered sugar
  • zest of 1 small lemon
  • ½ tablespoon lemon juice
  1. Place first 6 scone ingredients in blender. Set to pulse and continue to mix until butter has been completely mixed in. Scoop this mixture into a bowl and stir in chia seeds. Fold in whipping cream until just combined. The dough should all come together. If it seems dry add an extra Tbsp. of cream. Use your hands to bring all the dough together and shape into a disc, about 1 1/2 inches thick. Cut into 8 equal sized triangles. Place triangles in parchment paper lined baking sheet.
  2. Bake for 11 minutes in 425 degree oven. Cool.
  3. Combine glaze ingredients and drizzle over scones. This is a small amount, if you desire more double!
  4. Eat and enjoy!
